Before I became a full time blogger, I worked in an office where every day we’d leave at exactly10:00am for a Starbucks break. I have to admit, Starbucks isa bit overpriced for my tastes, but it was a great excuse to get out of the office. I always ordered a plain jane coffee. A decaf coffee at that… What can I say? I was strong and went off caffeine for about 5years before I binged back into my caffeine addicted ways last year…

Anyway, every autumnI’d order at least one pumpkin spice latte with my free rewards (because goodness knows I’m way too cheap to pay full price for that… haha), and yes, it had great flavours, but it was never really my favourite. I found it way too sweet.

But oh my goodness, I can’t imagine ever buying a pumpkin spice latte again, because this homemade slow cooker pumpkin spice latte recipe is soooooooo good.

You know when you make something, and you’re kind of nervous because you’re dropping pumpkin puree into what’s supposed to be your coffee, which feels just plain weird. But you’re brave and you run with it, and when it’s finally ready, you ladle it into your favourite coffee mug, top it with whip cream (then add more whipped cream…), and sprinkle it with some pumpkin pie spice.

And then the moment of truth. You hold the mug with two hands because it’s cold outside and you take your first sip. And then you smile. And then you smile even more because you realize you’re smiling at your coffee and how delicious it is. Andyou wonder to yourself, “how on earth have Inever made this heavenly drink at home before!?” I’ll admit, I sometimes get a little more excited about my coffee than normal people, but that’s pretty much how it all went down for me.Mmmm…

So let’s just ignore thatapparently I tell stories about myself and my coffee obsession in the third person. Because this recipe is AMAZING. Seriously. If you’re a coffee fan, you need to try it. And even if you’re not a coffee fan, and you’re more ofthe person who pours half a container of sugar in their coffee, that’s okay too. Because you can add as much sugar (or as little sugar) as you like. The flavour is AMAZING.

Slow Cooker Pumpkin Spice Latte

The full printable recipe is at the end of this post but here’s what you’ll need:

  • Freshly Brewed Coffee
  • Milk
  • Sugar
  • Canned Pumpkin Puree
  • Pumpkin Pie Spice
  • Vanilla Extract
  • Cinnamon Stick

The recipe doesn’t need a ton of coffee, so you’re going to want to make the coffee fairly strong so the flavour comes through the spices.

Add all of the ingredients to a 2 quart crock pot (this is the one I use) and whisk it well.

The spices don’t dissolve, so you’ll see them sitting on the surface like in the photo below.

Cover it up and let it cook for 4 to 6 hours and oh. my. word. It tastes soooooo good!

Ladle it into your favourite coffee mug and enjoy!I couldn’t resist, so I added loads of whipped cream and sprinkled some extra pumpkin pie spice on top. Itwas delicious!

If you have a larger crock pot, or a larger crowd you want to serve, feel free to double the recipe. Or if you aren’t making a lot, you can also cut the recipe in half.

And heck, if you want it right away, throw all the ingredients in a pot, and simmer it on the stove for 20 minutes. I just like thatit makes the house smell heavenly when it simmers in the crock pot for a few hours. Plus it makes it so easy to serve at a little get together!

  • Add the milk, coffee, pumpkin, sugar, vanilla extract, and pumpkin pie spice to a 2 quart crock pot. Whisk well to combine.

  • Add a cinnamon stick, cover, and cook on high for 4 to 6 hours.

  • Top with whipped cream and extra pumpkin pie spice.

Notes

Adjust the sugar amount for your tastes. This recipe is less sweet than Starbucks (so if you like Starbucks, add 1 to 2 Tablespoons more sugar), but it's quite sweet if you don't usually put sugar in your coffee (only put in 1 to 2 Tablespoons of sugar if you don't usually take sugar in your coffee).
