Summer Grilled Veggies

I have a confession, my friends... This Summer, I kind of upped and walked away from my mom's kitchen duties and kept the cooking to an absolute minimum. I mean really, we may have even had popsicles for dinner once or twice. Ooops.

While I loved roasted brussels sprouts on a sheet pan or baking sheet with lemon zest and parmesan cheese, this grilled recipe is up there in the deliciousness category.

In any case, I did everything in my power tonot spend more than 5 minutes in the kitchen prepping, and then it was onto the grill. That of course also applies toparties andget-togethers!

Yep, we still were able to spend lots of a great time with friends, but I was doing cannonballs rather than prepping and congregating around the kitchen. One of my all-time favorite appetizers that are both easy and absolutely delicious is my grilled Brussel sprouts. They are so easy to make and are so tasty, you're going to wonder why you have not been making these all the time.

Grilling Vegetables are one of our absolute favorite thing EVER and we look forward to firing up the grill every Summer.

What you Need for Grilled Brussel Sprouts

  • Brussel Sprouts
  • Soy sauce
  • Pepper
  • Garlic powder

Prepping Brussel Sprouts

Brussels sprouts do require a bit of prepping before eating them. They are the freshest when found on the stalk. Remember to keep the stem in water until you use them if you are going with the brussel sprouts from the stalk.

Wash them in cold water and remove any wilted or yellowing outer leaves. If the stem end is hard and brown then remove those too. Place on paper towels to dry and then they are ready to grill.

How to Grill Brussel Sprouts

Depending on the size of your sprouts, cut them in half or even quarter them.

In a large bowl, mix in the soy sauce, a pinch of pepper, and garlic powder. Toss the Brussel sprouts in the mixture and leave to marinate for at least 20 minutes.

The soy sauce provides more than enough sodium, but in the case, you do not have soy sauce, then another simple marinade is balsamic vinegar, extra virgin olive oil, kosher salt, and pepper. We love this marinade recipe just as much as it gives the sprouts a balsamic glaze. Both are popular recipes using simple ingredients.

Grilling Brussel Sprouts

Preheat the grill to medium-high heat till you have a hot grill.

Place Brussels Sprouts directly on the preheated grill for approximately15 minutes on each side.

Here is the key, although you are going to get these great grill grates marks, and think they are done, they are not. Brussel sprouts are hard and have more of a bitter flavor, and need to be softened during the cooking process. The longer you can keep sprouts on the grill the better.

Close the lid on the grill when cooking the sprouts. It will steam the vegetables and soften them. Trust me, you want them to have roasted crispy sprouts on the outside.

We are fans of cooking Brussel sprouts on the direct heat of the grill. If the grill basket is more your thing, then make sure to continue to shake the basket to make sure all the sprouts are getting cooked evenly.

For those that skewers are more your thing, you will want to use metal skewers because Brussel sprouts are hard and metal skewers are easier to get through.
