Get ready! By the time you read about this creamy, indulgent recipe – you’ll likely be drooling. Not only is this dessert absolutely scrumptious, but it’s actually good for you. And you can make it in less than an hour.

Just what makes this Miracle Rice Pudding so good for you?

Well, for starters, it’s full of the following truly beneficial Plant Paradox-friendly ingredients:

Coconut Cream (or Coconut Milk)

Dr. Gundry's Miracle Rice Pudding Recipe (Lectin-free) (2)Coconuts are one of the most powerful foods on the planet. What makes the coconut so healthy? Well, for one thing, they’re full of medium-chain fatty acids (MCFAs).

Turns out, more than half of the oils in coconut are made up of healthy MCFAs. That means they make coconut oil a great source of energy because they’re easier to digest than other fatty acids. Furthermore, they’ve got antimicrobial and anti-fungal properties.

The real benefit, though, is that they supply energy more rapidly than other foods. That’s because MCFAs can be directly absorbed by your intestine. Also, MCFAs don’t take part in the biosynthesis or even transport of cholesterol which allows coconut oil to help protect your heart health.1

Arrowroot Powder

Arrowroot powder is used as a thickening agent in plenty of recipes. It’s a special ingredient because of its rich combination of nutrients – like iron and copper. You may already know that these essential minerals are important components of your red blood cells. And that means arrowroot can potentially help prevent iron-deficiency and subsequent feelings of weakness and fatigue.2

Miracle Rice

Dr. Gundry's Miracle Rice Pudding Recipe (Lectin-free) (3)Now, Miracle Rice is quickly becoming one of Dr. Gundry’s favorite ingredients to cook with. What is it exactly? Well, the Chinese and Japanese have used shirataki – the main component of Miracle rice – for over 2000 years.

It’s made from the root of the Konnyaku Imo plant. You see, only the soluble fiber of the plant is used, so it’s incredibly low in calories. And much like actual rice, it easily takes on the flavors of the dish you’re making. So, in this case, it absorbs creamy coconut, and cocoa!

And now, I think it’s time to get cooking. So, let’s get started making Dr. Gundry’s soon-to-be-famous…

What To Do –

  1. Heat oven to 350F.
  2. Drain the Miracle Rice in a colander and rinse under running water for about a minute. Set aside to drain further. .
  3. Put arrowroot powder and ½ cup of the coconut milk or cream in a small bowl, and stir to dissolve. Add more arrowroot if necessary.
  4. In a medium saucepan, place the ghee or butter and the remaining 3 cups coconut milk. Cook over medium heat, stirring to break up any lumps.
  5. Add the Just Like Sugar, vanilla extract, cocoa powder, egg and finally the drained Miracle Rice.
Add about 1 tbsp of the dissolved arrowroot mixture to the “rice”, stirring to incorporate. Repeat 1 tbsp at a time until you achieve the desired thickness. Add a bit more coconut milk if it seems too thick.
  6. Lightly grease a baking dish or bowl with butter or ghee. Pour the pudding into the dish.
  7. Bake for 15 to 20 minutes, until the top is golden brown. Remove from the oven and cool a bit before serving or refrigerate and serve cold.

FAQs

Why does Dr. Gundry say rice is bad for you? ›

In his book, Dr. Gundry calls lectin (which is not to be confused with the phospholipid lecithin) a "highly toxic, plant-based protein" that can lead to autoimmune disorders, diabetes and weight gain. It's common in fruits, vegetables, nuts, beans, dairy and ... you guessed it, rice.

What is the lectin free diet found in Dr Steven Gundry? ›

Advocates claim that excluding foods high in lectins from the diet can have numerous health benefits, such as weight loss and prevention of chronic conditions.

What is a lectin-free rice alternative? ›

Plant foods like millet and sorghum grains are great when dining lectin-free. If you think you'll miss rice, try giving cauliflower rice a try. You can also load up on resistant starches like sweet potatoes, taro root, and jicama to satisfy your craving for rice-based comfort dishes.

What cancels out lectins? ›

Active lectins are what's found in raw plants. But boiling, baking, pressure-cooking and soaking can deactivate those lectins, so they're not going to have the same effect as they would if you ate them raw. Fermentation, sprouting and removing peels and seeds can also reduce the amount of active lectin in plant foods.

What are the symptoms of too much lectin? ›

Certain types of lectin may bind with the walls of your digestive system which can lead to serious problems. Eating one particular lectin, phytohemagglutinin, can lead to severe abdominal pain, vomiting, and diarrhea. Some proponents of lectin-free diets claim that lectins can cause symptoms of auto-immune disorders.

What are the cons of a lectin-free diet? ›

May be hard to consume enough key nutrients: Going without lectins might mean going without certain key nutrients, too. Curating a well-rounded diet with plenty of fiber is especially tough when you can't eat grains or legumes, as is getting plenty of antioxidants when fruits are off the menu.

Are blueberries high in lectins? ›

Blueberries get their health-promoting properties by way of flavonoids. Specifically, they're loaded with anthocyanins. Contrary to what some people have heard, blueberries do not contain lectins. There's a catch though: blueberries are highly seasonal, and are best consumed fresh and local.

Are carrots full of lectins? ›

Are onions high in lectins? ›

The lowest lectin content options are asparagus, garlic, celery, mushrooms and onions. Cooked root vegetables like sweet potatoes, yucca and taro, along with leafy greens, cruciferous vegetables, avocados, olives and olive oil are all examples of healthy foods that do contain some lectins.

What is the healthiest rice you can eat? ›

For example, whole grains are better for our health when compared to simple carbs – which is why brown rice or black rice are regarded as the healthiest options. You should certainly be looking into eating whole grain rice.

What are the three superfoods Dr. Gundry says to avoid? ›

There are 3 superfoods in particular that he says you should never eat: goji berries, chia seeds and wheat grass. The problem is that some so-called superfoods also contain lectins, those pesky plant proteins that can cause inflammation and set the stage for a variety of diseases, as well as weight gain.
